At the heart of our Irish heritage is the stately Roscommon Room, named for County Roscommon — ancestral home of Ocean Edge’s matriarch, Mary Merrigan Corcoran. 

Her portrait hangs proudly within the dining room, a meaningful reminder of the family legacy woven into the fabric of our resort. With warm wood tones, classic elegance, and sweeping views of Cape Cod Bay, the Roscommon Room offers a refined setting to honor that heritage. 

During A Taste of Ireland, guests can enjoy special Irish-inspired dishes crafted exclusively for the celebration — elevated takes on traditional favorites that pay homage to Ireland’s culinary roots while reflecting the coastal sophistication of Ocean Edge.

For a livelier take on the celebration, Bayzo’s Pub brings the spirit of Ireland to life with hearty classics and a convivial atmosphere. 

Feast on slow-cooked corned beef and cabbage, crispy Guinness-battered fish & chips, rich Irish stew with traditional soda bread, and shareable Irish nachos — all pairing perfectly with a pint of Guinness or your favorite local brew. 

With live music on select evenings and the hum of friends gathering together, Bayzo’s Pub captures the joyful, communal side of Irish hospitality — where glasses clink, stories are shared, and every meal feels like a celebration.
