Behind the Buzz: Try Eric’s Award-Winning Honeycomb Espresso Martini
Available Now at Bayzo’s Pub
At Cape Cod Coffee’s Espresso Martini Competition, Eric Cummings — one of our guests’ favorite bartenders — took home Best Presentation, earning buzz for what many are already calling one of the best espresso martinis on Cape Cod.
Eric honed his craft at Colombo’s in Hyannis, where creativity and a back-to-basics approach shaped his style behind the bar. That mindset led directly to his winning cocktail: the Honeycomb Espresso Martini, made with just two parts Drambuie and one part espresso. Simple, bold, and perfectly balanced.
But the real standout was the experience.
Eric and the team brought an ice luge to the event, pouring each espresso martini down ice for maximum chill, visual flair, and crowd excitement. Between the dramatic presentation, Eric’s quick wit, and a house-made honeycomb garnish (shoutout to Mick), the cocktail quickly became a crowd favorite.
Beyond the cocktails, it’s Eric’s personality that truly sets him apart. Known for his humor, easygoing charm, and genuine love of connecting with people, Eric has a way of making every guest feel welcome — and always leaves them smiling. That same warm hospitality extends across the entire team at Bayzo’s Pub, where friendly faces, thoughtful service, and great energy are all part of the experience.
It’s part of what makes Bayzo’s a go-to cocktail bar on Cape Cod for locals and visitors alike, known for creative drinks, a speakeasy-style vibe, and live local music most weekends.
